CoBo came about from experience and passion for the Japanese art of sushi. Head Chef and Owner, Joseph Miller lived in Steamboat Springs, CO for 5 plus years learning and apprenticing under muiltiple accomplished sushi chefs. Upon returning to his home town, he brought his passion here to fill a void the downtown area of Boone has had for a long time. CoBo is an insanely popular sushi restaurant and Joseph Miller is one of the hippest bosses around. His employees were raving all night about how great he is and we were treated like part of the family as we brought some entertainment to their holiday gathering. Such. a. blast!!
